How to Make Steak with Smashed Cucumber Salad

Ingredients

- For the Steak:



    - 2 boneless ribeye steaks (about 1 inch thick)

    - Salt and pepper to taste

    - Olive oil for searing

    - Optional: garlic cloves and rosemary sprigs for flavor

- For the Smashed Cucumber Salad:



    - 2 large cucumbers

    - 1 teaspoon salt

    - 2 tablespoons rice vinegar

    - 1 tablespoon soy sauce

    - 1 teaspoon sesame oil

    - 1 teaspoon honey

    - 1 tablespoon toasted sesame seeds

    - Fresh cilantro or mint leaves for garnish


 Instructions


1. Prepare the Steak

1. Season the ribeye steaks generously with salt and pepper.

2. Heat a cast-iron skillet or grill pan over medium-high heat.

3. Add a drizzle of olive oil to the pan.

4. Sear the steaks for about 3-4 minutes per side (adjust based on desired doneness: rare, medium-rare, or medium).

5. Optional: Add garlic cloves and rosemary sprigs to infuse flavor while searing.

6. Remove the steaks from the pan and let them rest for a few minutes before slicing.


 2. Make the Smashed Cucumber Salad

1. Peel the cucumbers and cut them into chunks.

2. Place the cucumber chunks in a large zip-top bag.

3. Sprinkle with salt and gently massage the bag to release excess water.

4. Let the cucumbers sit for about 10 minutes.

5. Drain the excess liquid and transfer the cucumbers to a bowl.

6. In a separate small bowl, whisk together rice vinegar, soy sauce, sesame oil, and honey.

7. Pour the dressing over the cucumbers and toss well.

8. Use a rolling pin or the back of a knife to gently smash the cucumbers (this helps them absorb the flavors).

9. Sprinkle with toasted sesame seeds and garnish with fresh cilantro or mint leaves.
